So ist der iberische Schinken mittlerweile Gegenstand auf den Tellern der Restaurants weltweit, auf Gastronomie-Veranstaltungen, auf Souvenir-Wunschlisten und sogar in Filmen. Doch es geht nichts \u00fcber das Probieren in seinem Ursprungsland.<\/p>\n<p><strong>Das Schwein und sein Zertifikat\u2026<\/strong><\/p>\n<p>Man sagt zurecht, dass das Probieren eines St\u00fcckes schmackhaften holzigen iberischen Schinkens einem Biss in die spanische Landschaft gleicht. Das ist nicht \u00fcberraschend, da dieser vom iberischen Schwein stammt, auch bekannt als \u201epata negra\u201c, einem schwarzen Schwein, welches schon seit Jahrhunderten durch die Iberische Halbinsel streift.<\/p>\n<p>Iberischer Schinken und seine Schweine sind nationaler Stolz und Erbe. \u00a0Die stark gesch\u00fctzte Ursprungsbezeichnung (Dominaci\u00f3n de origen) deckt die weite \u201eDehesa\u201c, ein mit Steineichen besetztes Land in Westspanien, ab, welche diese vier Regionen beinhaltet:\u00a0 Salamanca mit der Stadt Guijuelo, die Provinz Huelva mit der Stadt Jabugo, Extremadura und das Valle de los Pedroches.<\/p>\n<p><strong>Oliven mit Beinen<\/strong><\/p>\n<p>Iberische Ferkel werden mit Getreide und Eicheln aufgezogen bis sie 18 Monate alt sind. Dann, von Oktober bis Januar, wenn die Eicheln von den B\u00e4umen fallen, begeben sie sich auf die Dehesa, um dort w\u00e4hrend drei Monaten 6 bis 7 Kilo Eicheln zu essen. Ein Hektar Land darf von nur 2 Schweinen bewohnt werden, weil jedes Schwein auf 160 Kilo kommen muss, damit sein Schinken den renommierten Titel <em>jam\u00f3n ib\u00e9rico de bellota<\/em> (der edelste freilaufend auf Eichelbasis angef\u00fctterte Schinken der Welt) erh\u00e4lt.<\/p>\n<p>Den oliven\u00e4hnlichen Geschmack der Eicheln, welcher von seiner \u00d6ls\u00e4ure r\u00fchrt, kann man auch im Schinken schmecken, welcher den Schweinen deshalb den Beinanamen \u201eOliven mit Beinen\u201c einbrachte. Nichtsdestotrotz sind die von der Decke h\u00e4ngenden Schinkenbeine ein vertrauter Anblick in Bars, Restaurants und M\u00e4rkten in ganz Spanien.
